Jamaican BBQ, AKA Jerk

As we make our way back home, passing through the Pocono Mountains, we stumbled across the "209 Blazing Grill - BBQ Jerk House"in East Stroudsburg PA.
Jerk, is a traditional cooking style where meat (commonly chicken or pork) is marinated in a fiery, aromatic spice mix—featuring Scotch bonnet peppers and pimento (allspice)—then slow-smoked over pimento wood, resulting in a tender, charred, and smoky flavor. This cultural fusion, often called Caribbean BBQ or Jerk grilling, combines smoky, savory, and sweet flavors.
We had a memorable time chatting and dining with the owner/chef Benjiman and his assistant Oscar. Check out our video of this place.
